Our anchovies are caught exclusively in the Cantabrian Sea (FAO area 27).
The maturation process lasts a minimum of 12-18 months, giving our product its characteristic color and aroma.
Our meticulous work results in fillets with minimal salinity (7.3 g per 100 g of anchovy) and a unique texture.
Our tins bear the Calidad Cantabria and Anchoas de Cantabria seals, guaranteeing that the entire process is carried out manually at our facilities in Santoña (Cantabria).
